Jambalaya
Here's my quick and delicious recipe for the Cajun favorite . . .
Ingredients:
All of your favorite seasonings
1 whole chicken or equivalent parts
1 Stick of butter, margarine, or 1/4 cup oil
3 large onions (red,white, and yellow)
2 pounds of your favorite cooked sausage (I like Hillshire Farms
Hot Smoked Sausage)
1 bunch of celery
3 bell peppers (red, yellow, and green)
2 cups rice
3 bunches of green onions
1 bunch of fresh parsely or cilantro
Directions
Season chicken to taste and bake at 375 degrees for 45 minutes
Chop onions and sautee in a stick of butter until golden to dark
brown. (use a big pot)
Then add sliced sauage and cook together until saucy.
Now add chopped celery and peppers, chicken, and rice with the
appropriate amount of water (varying on the brand of rice) and stir
well.
Follow the rice directions. When its ready, your ready to chow
down.
Add chopped green onions and parsely to your plate with your
favorite seasoning.
Bon appetit. Hmm-mmm. C'est si bon, cher!
Veggie-Laya
Double the amount of onions, celery, and peppers. Sautee onions
in olive oil instead of butter. Substitute 1/2 the celery and peppers
for the sausage and sautee altogether until golden brown and saucy. Then
add the rest of the celery and onions with the rice and water. Stir well
and follow the rice directions. See end of above directions!
